Will it change their face?

The face stays theirs. The template adds motion, light and a camera move; it does not redraw the person.

How good does the scan need to be?

A phone photo of a print is fine. Faded colours and film grain are fine. A face too small or too blurred to see is not.

Are my photos used to train anything?

No, never. They make your video, they are deleted after 30 days, and they are not sold or used for training.
